How to make: apple, fig and walnut porridge


There's nothing I love more than breakfast. Well...ok, that's quite a bold statement, but it is true that my favourite time of day is breakfast time. Most people either grab something on their way out the door in the morning, or perhaps have time for a small bowl of cereal...not Rhiannon Hutchings! For me, breakfast is the most important meal of the day - it should be for everyone - and I set aside time to make the best breakfast possible, which often includes a lot of experimenting. One of my favourite things to have for breakfast is porridge. Not only is it extremely healthy and keeps you full for a long time, it is the perfect base for experimenting with so many different things. It's especially nice to eat during the colder months as it's a really comforting meal. Today I made a delicious bowl of apple, fig and walnut porridge, perfectly apt for this time of year. Ingredients: 1 apple ​4 - 6 figs A handful of walnuts 1 cup of oats 1 and a half cups of milk 1 tablespoon of brown sugar Half a tablespoon of cinnamon A lob of butter / coconut oil (Serves 1 hungry person.) First, peel the apple and chop it into small chunks. Chop also the figs and the walnuts into small pieces. On a hob, melt a lob of butter or some coconut oil and toss in the apples. Whilst they are cooking, add the brown sugar and cinnamon.

After a few minutes add the figs and stir until the ingredients are soft and coated in cinnamon and sugar. Now it's time to make the porridge. Add the milk, oats and finally the chopped walnuts to the mix. I used jumbo oats which take a bit longer to cook, but just keep stirring until it all comes together.

Once it has become nice and thick, serve immediately and enjoy!
